Head chef: Takuya MAEDA

Born in Aichi prefecture.
He learned the basics of cooking at an Italian restaurant in Nagoya.
After working as a head chef at a local restaurant at the young age of 22, he got truely fascinated by Italian cuisine and moved to Italy in 2008. He experienced in various places, mainly at a one-star restaurant in Puglia.
After returning to Japan, he worked at Ginza Bvlgari Il Ristorante for four years, then served as the head chef at Ristorante Kurodino Kagurazaka, before becoming the head chef at Etruschi in 2019.
He is a chef who is particular about combining ingredients to maximize their flavor, color, and aroma, and never forgets to constantly hone new sensibilities.

Won “Due Forquette” from GAMBERO ROSSO 2024 for 5 consecutive years

We received 2 marks of fork, “Due Forquette” from the restaurant category of GAMBERO ROSSO 2024 Tokyo edition, which is a digital guide of gourmet rating on par with Michelin award. Only 6 restaurants received more than one fork mark and we are one of them.
